Heritage & History
In 1923, Alvin Baumer Sr. purchased Mill's Fruit Products, a small sno-ball syrup company on Tchoupitoulas Street in New Orleans. While going through the acquisition paperwork, he found a hand-labeled recipe tucked in a desk drawer — a Louisiana-style cayenne hot sauce called Crystal Pure. Baumer began producing it alongside the syrup business, and within years the hot sauce had overtaken everything else. The company was renamed Baumer Foods, Inc., and moved to a larger facility on Tulane Avenue in Mid-City.
Hurricane Katrina devastated the Tulane Avenue plant in 2005. Instead of closing, Baumer Foods signed a long-term lease with the Port of South Louisiana and rebuilt, opening a new facility in Reserve, Louisiana in 2007.

The Baumer Foods plant at the Globalplex Intermodal Terminal in Reserve, St. John the Baptist Parish, spans approximately 190,000 square feet. The facility produces more than 4.5 million gallons of Crystal Hot Sauce annually alongside Worcestershire, steak, wing, and other sauces under the Crystal brand. The facility is SQF certified and employs approximately 166 workers.
Crystal remains a third-generation, family-owned business. Alvin 'Pepper' Baumer III became president in 2019. The sauce itself is unchanged: aged red cayenne peppers, distilled vinegar, and salt. That simplicity has kept it the most popular hot sauce in Louisiana for over a century.
